Should I purchase the Gluten Free Casein Free Kit or the Gluten Free Kit?
All Celinal Foods are gluten free. The bread and biscuit contain a small amount of milk that provides texture and flavor benefit. Many lactose intolerant people manage the milk used as an ingredient in baked goods and it is expected that Celinal recipes should be tolerated too.
Gluten Free, Casein Free diets are not as common as Gluten Free diets. If your facility has had difficulty managing Gluten Free Casein free diets then the GFCF kit is your best choice, however this limits some menu flexibility.
The Gluten Free Kit will meet most needs. Facilities with IgE Dairy Allergies and requests for Gluten Free Casein Free diets will find the GFCF kit provides the most usefulness.
Are these products available at Discharge?

What are Low-Gluten diets?
Low-Gluten diet is a term adopted by some LTC facilities to describe their diets planned for people with Celiac Disease in the US. Other countries use this term for Gluten Intolerance which is like lactose intolerance, a digestive function. Celiac Disease is an autoimmune condition that has been shown to be responsive from 10 to 50 PPM (part per million) gluten in a diet daily. This is a very small amount, less then one eighth a teaspoon of wheat flour. 'Gluten-Free' will have a definition mandated by the government in 2008. The definition will define how much gluten can be found in a product promoted for use in a gluten free diet. Any food not appropriate is harmful to people with celiac disease and should not be used to plan menus.
Are Celinal Foods products Kosher?
Celinal Foods are not certified Kosher at this time.
What is the Shelf Life of Celinal Foods products?
Celinal Foods Mixes have a Shelf life of over two years. All Celinal Foods mixes are low fat, the ingredients most likely to go rancid. For people who purchase kits, we will give you a notice to replace your Gluten Free Diet readiness kit when it expires, so you'll always be prepared.
People do not like the bread; what should I do?
All gluten Free bread is best toasted. Although some kids like the squishy crustless white bread texture, many will not. Toast the bread in a safe manner: in the oven or using a toast-it bag in the toaster. Toasters are contaminated so unless there is one dedicated for only gluten free bread it is best to serve grilled and open face hot sandwiches with gravy.
